Your guide to Sknife Steak Knives
The swiss steak knife forged in Switzerland is made of a surgical steel. Therefore the Swiss steak knife has a four times higher corrosion resistance and high hardness of 58 HRC.
The Swiss table knife produced in the sknife manufactory fits comfortably in the hand thanks to its optimized design. The Swiss table knife convinces with its surgical steel blade and its handle made of local walnut or black ash wood (ash wood available in 4 different colors).
The Swiss steak fork – consistent with the steak and table knife – is handmade and produced in the sknife knife manufactury in Biel. The Swiss steak fork made of surgical steel is forged in Emmental. The handle is made of local stabilized ash tree and walnut. In Europe there are only three remaining manufacturer who produce forks in one piece. In Switzerland sknife there is only one remaining. The steak cutlery walnut was honoured with the Red Dot Design Award 2018 “Red Dot: Best of the Best“.
The surgical steel was primarily developed for Airbus and is today used in surgery for highly loaded parts – as bone screws – as well as in watchmaking. Throughout the fine structure a very high durability can be achieved and therefore the grind of the knife is much thinner. By replacing carbon with nitrogen it increases the corrosion resistance by factor four. Thanks to high hardness of 58 HRC, which is in the range of the Japanese knives, the knife stays sharp for a very long time.
Swiss wood: the walnut as well as the ash tree wood with its beautiful wood structure are both from a wood turnery in Emmental (Swiss wood, FSC-certified). To make the wood durable it is infiltrated with a 100% acryl to get stabilized – this under vacuum and pressure. This procedure also changes the color of the wood. This technology is based on the latest research results from development projects together with the University of Applied Sciences in Biel.
Forge in Oberburg and knife manufactory in Biel: at about 1’000°C and with a hammer impact energy of 3.5 tons the high quality steel is forged in Emmental – an amalgamation between a high quality material and wrought craft. The knives are manufactured entirely by hand in the sknife knife manufactory in Biel.
The wooden grips are assembled manually and seamless glued. The glue has been used in the aviation and therefore it is very heat-resistant. The knife and the wooden grips are pre-grinded at the same time and in several additional steps put into the final form from a professional cutler.
Regrinding: the surgical steel of the sknife knives has an extremely high hardness and is very thinly ground. For regrinding we recommend a ceramic rod (sharpener), which is very fine-grained so that the blade cannot be scratched.
